Mycotoxins are toxic secondary metabolites produced by a fungus. They are naturally occurring toxins produced by certain molds (fungi) and can also be found in food. The molds grow on a variety of different crops often under warm and humid conditions.

Aflatoxin B1 (AFB1) is one of the most potent naturally occurring carcinogens and is the most toxic member of this group of mycotoxins.

Before coming to Encore, Mary Beth spent 5 years as a business manager and associate instructor at Axion Analytical Labs in Chicago, IL, the only facility of its kind dedicated to hands-on chromatography training courses.

She has a degree in chemistry from Furman University in Greenville, SC.
